• 1 cup granola cereal
  • 2 tablespoons canola oil
  • cup brown sugar
  • ¼ cup flour
  • 8 medium Golden Delicious apples
  • 1 cup pitted prunes
  • cup apple cider or juice
  • 1 tablespoon lemon juice

Stir together cereal, oil, 1/4 cup packed brown sugar and 1/4 cup flour with a fork to make topping.

Preheat oven to 400°F. Peel and core apples, and cut into 1/4" slices. Chop prunes coarsely, then toss apples and prunes with cider, lemon juice, 1/3 cup packed brown sugar and 1/4 cup flour.

Spoon apple mixture into shallow 3-qt baking dish, then sprinkle crumble topping over, cover with foil, and bake 40 minutes. Remove foil and bake 20 minutes longer until apples are tender and topping browns. Cool slightly, then serve warm. Makes 12 servings.
