Ingredients

  • 8 baby artichokes
  • 1 tablespoon olive oil
  • 6 garlic cloves
  • 1 cup olives, with or without pits (small ones work well)
  • 2 package cups/1 cherry tomatoes
  • 1 sprig thyme
  • 1 teaspoon salt

Directions

Clean the outer leaves off the artichokes, and the outer inedible part of the stalk. Cut off top 1", then split each lengthwise. Sauté over medium heat in the olive oil, cut side down, with the olives, garlic, thyme and tomatoes for a couple of minutes until browned.

Add salt, then 1/2 cup of water, and cover. Braise for 20 minutes. Serve with a good bread for lunch.
