Ingredients

  • ½ cup shortening
  • 1 cup sugar
  • 2 eggs
  • 3 small or 2 large ripe bananas
  • 1 teaspoon lemon juice, OR
  • 1 tablespoon orange juice
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 cup chopped walnuts
  • 1 tablespoon orange zest (optional)

Directions

Cream shortening and sugar well, then cream in eggs one at a time. Add bananas to mixer (or mash ahead of time), then stir in lemon juice.

Sift flour and baking powder together, then mix quickly into the banana mixture. Stir in the chopped nuts, then turn into greased 9x5 bread pan. Bake at 350°F for about 1 hour.
