• 1-¾ cups Sylvan Border farm flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1-½ tsp Xanthan gum
  • ½ cup vegetable oil
  • 1-½ cups sugar
  • ½ cup buttermilk, plus 1 tablespoon
  • 2 eggs
  • 1 tsp vanilla
  • 2 bananas, ripe, mashed
  • 1 cup chopped nuts


1. Combine first four ingredients and set aside. Beat oil and sugar, then add the buttermilk, eggs and vanilla, beating well with each addition. Stir in the mashed bananas, then stir in the dry ingredients and walnuts.

2. Spoon into a greased 9x5x3" pan. Bake at 350°F for 60 minutes, or until a wooden pick comes out clean from the center.
