An absolutely delicious meal, balanced and flavorful

Ingredients

  • 2 cups black beans, soaked for 2 hours
  • 6 strips bacon
  • 1 medium onion, chopped
  • 2 cups corn kernels
  • 2 cups chicken broth
  • 1 red bell pepper

Directions

Cook the beans in unsalted water for an hour. Drain and set aside.

Chop bacon into small pieces, then cook in the bottom of a 4-quart pot. Drain excess fat, then add onions and sautee until clear.

Add the chicken broth and beans, and simmer for 1 hour until beans are tender and excess liquid is reduced. Add corn and chopped red pepper, and cook for another 10 minutes to combine flavors.
