Great for breakfast, healthy too

Ingredients

  • 3 cups shredded bran cereal
  • 1 cup raisins
  • ½ cup vegetable oil
  • 1 cup boiling water
  • 2 eggs, beaten
  • 2 cups buttermilk
  • ¼ cup molasses
  • 2-¼ cups flour
  • 4 teaspoons sugar
  • 2-½ teaspoons baking soda
  • ½ teaspoon salt

Directions

Mix first four ingredients well, and set aside. Mix the next three ingredients, then pour into the bran mixture. Stir in the flour, sugar, baking soda and salt, being careful not to overmix.

Pour the mixture to fill greased muffin tins 2/3 full. Bake at 400°F for 20 minutes.
