A quick, basic balanced meal for two

Ingredients

  • ¾ cup long grain rice
  • ¾ lbs. thinly sliced beef
  • 2 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 2 teaspoons grated ginger
  • 2 garlic cloves, crushed, chopped
  • 4 cups broccoli florets
  • 3 teaspoons corn starch in 4 tbsp water

Directions

Marinate beef in soy sauce, sherry, ginger and garlic for 30 minutes. While the beef marinates, rinse and cook the rice in 1-1/2 cups boiling water, over very low heat.

Saute beef and broccoli together quickly, add theremaining marinade, then add corn starch solution to thicken the sauce. Serve immediately over rice.
