Ingredients

  • 1 lb Bucatini pasta, one package
  • 3 tbsp pesto
  • 2 small zucchini, julienne
  • 1 cob fresh uncooked corn, kernels, cut off the cob
  • ¼ cup salami, chopped
  • 1 lemon, juice and zest
  • 2 tbsp olive oil
  • 1 tbsp red pepper flakes
  • ½ cup parmesan, shredded
  • fresh ground black pepper, to taste

Directions

1. Cook the pasta according to directions. In the mean time, julienne the zucchini using a mandoline, and cut the corn off the cob. Grate the parmesan.
2. Combine the cooked pasta together with the other ingredients. Toss together and serve immediately.
