The best caesar dressing ever!

Ingredients

  • Dressing:
    • cup + 1 tbsp lemon juice
    • cup virgin olive oil
    • 2 cloves garlic
    • 3 tablespoons fresh grated parmesan cheese
    • 1 egg, soft-boiled
    • 1 anchovy, or 1" of anchovy paste
  • Croutons:
    • 3 cups french bread cut into 3/4" cubes
    • 4 tablespoons virgin olive oil
    • 1 tablespoon chopped parsley
    • 1 teaspoon chopped garlic
  • Salad:
    • 2 heads Romaine lettuce, outer leaves removed
    • 3 tablespoons parmesan cheese, coarsley grated

Directions

Make croutons by tossing bread cubes with olive oil, parsley and garlic. Scatter on a cookie sheet, and bake for 5-8 minutes at 400°F until brown.

Make the dressing by placing the first six ingredients in a blender or food processor, and pulsing until well mixed.

Chop or shred the inner part of the lettuce head into a bowl, add dressing, toss, add croutons and parmesan, and toss again.
