Ingredients

  • 5 cups water
  • 8 ounces dried apricots
  • 1 cup sugar
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon cardamom seeds, from about 12 pods

Directions

Combine all ingredients in a heavy large saucepan, and let stand 15 minutes. Bring to a boil, reduce heat, and simmer slowly until apricots are very tender, about 15 minutes. Transfer the apricots into a bowl using a slotted spoon. Simmer the syrup in the saucepan until reduced to 1-1/2 cups, about 8 minutes. Pour over the apricots, chill until cold (about 4 hours), and serve.
