Ingredients

  • Dressing:
  • 3 tablespoons olive oil
  • 1-½ tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sugar
  • salt and freshly ground pepper to taste
  • 6 carrots, peeled and grated/julienned
  • 1 tablespoon freshly chopped chives

Directions

Combine all dressing ingredients and whisk together. Add the carrots and chives, and toss together.
