Ingredients

  • 2 quarts cold water
  • 1 quart milk
  • 6 teaspoons white sugar
  • 6 teaspoons black tea leaves
  • 8 cardamom pods
  • 4 allspice seeds
  • 6 whole cloves
  • 6 coriander seeds
  • 1 stick cinnamon
  • Optional:
  • 1 teaspoon mint leaves
  • 3 black peppercorns

Directions

Bring water to a boil, and add the Chai Masala or spices. Boil for at least 1/2 hour to reduce to 1 quart, add the tea, and simmer for several minutes. Add the milk, and heat back to serving temperature. Strain into serving cups.

Notes

You can try using 1/4 teaspoon of each of the four spices
Milk - Whole or raw milk is more authentic, but use whatever you like to drink. Milkman lowfat or Nido whole are two brands in most stores. Real buffalo milk is hard to find in dried form.

Tea - Recommended is Lipton Green Label pure Darjeeling tea, available in Indian groceries. Or use any other loose darjeeling tea. Also works with English Breakfast, Ceylon, or Assam.

Sugar - Plain white sugar is best, and most authentic. Brown sugar or honey will alter the flavor.
