One of my all-time favorites

Ingredients

  • 1 whole chicken breast, deboned
  • 1 bunch spinach, cleaned with most stems removed
  • 1 clove garlic, chopped
  • 1 teaspoon pesto
  • 1 tablespoon parmesan
  • ½ cup ricotta cheese
  • ¼ cup pine nuts
  • 1 cup french bread, cut into small cubes

Directions

Salt and pepper the chicken breast, and lay skin-side down for stuffing. Wilt the spinach in a bit of olive oil with the garlic and pesto, remove and cool. Mix in the parmesan, ricotta, pine nuts and bread to make a firm stuffing, then pack it into the underside of the chicken breast.

Place the breast with the stuffed side down into a roasting pan, and bake at 350F for 45 minutes. Let it rest for 5 minutes, then slice into servings.
