Ingredients

  • 5 cloves garlic, peeled and mashed
  • 2 teaspoons grated fresh ginger
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon ground cumin
  • 1-½ teaspoon salt
  • fresh ground black pepper
  • 2-½ tablespoons white vinegar
  • 3 whole chicken breasts, separated into halves, boned and flattened
  • 3 tablespoons olive oil
  • 2 tablespoons finely chopped chives or parsley

Directions

Mix the first 7 ingredients together to make a marinade, and pour over the chicken breasts in a large bowl. Prod the chicken pieces with a fork to let the marinade penetrate. Let sit for at least 1/2 hour.

Heat the oil in a non-stick pan over medium-high heat, and sauté the chicken pieces 2-3 minutes on each side until nicely browned. Alternatively, the chicken pieces can be grilled. Serve on a warmed plate with chive garnish.
