Ingredients

  • 2 whole chicken breasts, split
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons dried oregano
  • 1 ⅓ tablespoons red wine vinegar
  • 2 ⅔ tablespoons capers & a bit of juice
  • 1 ⅓ tablespoons olive oil
  • coarse salt
  • freshly ground pepper
  • ¼ cup brown sugar
  • ½ cup white wine
  • ¼ cup pitted Spanish olives
  • ¼-½ cup dried fruit, (prunes, apricots, pears, peaches)

Directions

Mix oil, vinegar, spices, and capers. Spoon mixture evenly over chicken arranged in single layer in glass or ceramic pan. Cover & marinate several hours or, preferably, overnight. Soak dried fruit in a little water for several hours or overnight.
Arrange chicken in large baking pan, spooning marinade over it. Sprinkle chicken pieces with the brown sugar. Pour wine around, not on, chicken. Place dried fruit and olives around chicken.

Bake in 350∞F oven about 35 - 40 minutes. Serve with rice.
