• 2-¼ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 large eggs
  • 1 teaspoon vanilla
  • ¾ teaspoons salt
  • 14 tablespoons butter, cut into chunks
  • ¾ cup dark brown sugar
  • ¾ cup granulated sugar
  • 2 tablespoons vegetable/canola oil
  • 1-½ cups chocolate chips OR
  • 1 cup each of chocolate chips and toasted nuts


Sift flour, baking powder and baking soda into a medium bowl and set aside. Mix the sugars in a large bowl, add in eggs, vanilla and salt. Microwave butter 30-45 seconds until just melted but not hot. Add the butter and oil into the sugar mixture, and cream together. Add dry ingredients and stir until smooth, then fold in the chips and nuts.

Use a 3-tbsp ice cream scoop to make dough balls, and freeze for 30 minutes until hard. Heat the oven to 400∞F. Bake 8 cookies at a time on a parchment-lined cookie sheet until set, but not brown, 8-10 minutes. Reduce oven temperature to 350∞F, and continue to bake until cookies are golden-brown around the edges and lightly brown on top, about 10 minutes longer. Let the cookies cool on the sheet, and reheat the oven to 400∞F for the next batch.
