Ingredients

  • 1 medium fryer
  • 1 cup pearl onions
  • 1 teaspoon sugar
  • 8 medium mushrooms
  • ½ medium chopped onion
  • 1-½ cups dry red wine
  • 2 bay leaves
  • 2 teaspoons (or 1 fresh bunch) thyme
  • olive oil

Directions

1. Cut wings off the fryer, part at joints, and brown in 1 tbsp olive oil, forming a couple of tablespoons of fat in the pan. Place pearl onions in a small pan with 2 tsp oil, sugar and 1/2 cup water. Cover and brown onions to develop carmel.
2. Carve remainder of chicken into pieces, deboning breasts, removing all skin and chopping the ends of the drumsticks off. Brown chicken pieces in the hot fat, add chopped onion and sauté until clear, then add wine, bay leaves and thyme. Cover and sauté until reduced to thin sauce.
3. Add mushrooms to pearl onions and cook until tender. Remove chicken pieces to serving plate, add onions and mushrooms, then reduce sauces from chicken and onions with a little starch to make sauce. Pour over chicken and serve.
