Ingredients

  • 2 Cornish game hens
  • 2 strips of bacon, diced
  • ¼ cup onion, chopped
  • 2 garlic cloves
  • 1 cup fresh breadcrumbs
  • 1 egg, beaten
  • ¼ cup grated Parmesan cheese
  • ½ cup frozen chopped spinach
  • thawed and squeezed to remove
  • excess water
  • dash of nutmeg
  • 1 tablespoon butter, melted
  • 1 tablespoon seasoned breadcrumbs

Directions

Clean hens and pat dry. Sautee bacon until crisp, add onions and one minced garlic clove, sautee until soft. Drain excess fat, then combine with breadcrumbs, egg, cheese, spinach and nutmeg in a small bowl.

Stuff the hens with the mixture, then brush with melted butter and sprinkle with seasoned breadcrumbs. Roast at 400∫F for 45-50 minutes.
