A great holiday side dish, colorful and hearty.

Ingredients

  • 10-12 medium russet potatoes, peeled and quartered
  • 6 carrots, peeled and quartered crosswise
  • cup sour cream
  • ½ cup unsalted butter, softened
  • 2 teaspoons tabasco sauce
  • ½ cup chopped green onion
  • 1 cup chopped poblano chiles
  • 2 teaspoons salt
  • 1 teaspoon fresh ground pepper

Directions

Bring a large pot of water to a boil, and add the potatoes and carrots. Cook until tender, about 15-20 minutes. Drain well, and coarsely mash together with the butter.

Add all the remaining ingredients, and combine with the mashed potatoes. Keep warm.
