• 5 large Golden Delicious Apples
  • 1 large lemon
  • ½ cup dark seedless raisins
  • 2 teaspoons vanilla extract
  • ¾ teaspoons cinnamon
  • 2-¼ cups cranberries
  • sugar
  • flour
  • 1 large egg white, whisked
  • 9" deep dish pie crusts

Peel, core and thinly slice apples. Juice the lemon over the apples, toss with raisins, vanilla, cinnamon, 2 cups cranberries, 3/4 cups sugar and 3 tbsp flour.

Preheat oven to 425°F. Fill one pie crust with mixture, roll out second crust, then cut leaves out of the second crust. Score with veins, place on top of pie, and brush with egg white. Sprinkle with 1 tbsp sugar.

Place foil under pie plate, crimp edges of pie, and tent with more foil. Bake for 40 minutes, then remove foil tent and bake for 30 minutes longer until apples are tender and crust is browned. Cool slightly, garnish with remaining cranberries, and serve warm.
