Ingredients

  • 12 New Potatoes
  • 1 sprig Rosemary
  • Black pepper
  • Kosher salt
  • 3 tbsp Olive oil

Directions

1. Cook the potatoes whole in salted boiling water until fork-tender, about 20 minutes. Oil a baking pan, and place the potatoes on the pan with lots of space in between.
2. Using a potato masher, press the potatoes flat like thick cookies. Salt and pepper generously, then crumble fresh herbs on top.
3. Bake at 450°F for 20 to 25 minutes until they are golden, crispy on the edges, and sizzling.
