Ingredients

  • 2 tablespoons olive oil
  • ½ cup chopped red onion
  • 2 teaspoons curry powder
  • 1 lb. ground chicken or turkey
  • 1 small egg, lightly beaten
  • ½ cup fresh bread crumbs
  • ¼ cup peeled and grated Granny Smith apple
  • ¼ cup chopped mango chutney
  • 2 scallions, thinly sliced
  • salt and fresh pepper, to taste

Directions

Sauté the onions in the oil over low heat for 10 minutes, then add the curry and cook for another minute. Remove to a bowl, cool, and add all the remaining ingredients. Form into 4 patties, about 3 inches in diameter and 1 inch thick.

Brush the grill with oil, and cook the patties over medium heat for 5 minutes per side. Serve on buns with mayonnaise, and optionally, Carrot Salad.
