• 1 lb. good feta (Bulgarian or French/ get it a deli NOT in those plastic packages at Safeway).
  • 1 lb. ricotta
  • 2 eggs
  • 2 tablespoons minced parsley
  • 1 package phyllo dough (you can get this in the frozen foods section at Safeway or in any deli shop)
  • ½ lb. butter


Grate/smash/crumble feta. Mix with ricotta, parsley and eggs. Melt the butter in a saucepan or microwave.

Brush 6-8 filo dough leaves with butter and stack together. Spoon 1/3 feta mixture on filo stack and wrap in a roll like a burrito. Place in baking pan. Repeat steps to create two more rolls.

Bake at 350degF for about 30 minutes. Filo rolls should be a golden brown when they're done cooking. If they're not, bake at 425degF for another 10-15 minutes.
