Ingredients

  • 12 ounces fettuccine or linguine
  • salt
  • 1 tablespoon flour
  • ¼ teaspoon coarse black pepper
  • ¼ teaspoon nutmeg
  • 2 cups low-fat milk
  • ½ cup grated parmesan
  • 1 tablespoon chopped parsley

Directions

Prepare fettuccine per label with 1 tbsp salt in water. Drain and keep warm.

In 5-qt pot, mix flour, pepper, nutmeg and 1/2 tsp salt, then stir in milk. Cook over medium high heat, stirring constantly, until mixture boils and thickens slightly. Boil 1 minute, then remove from heat.

Stir in fettuccine, grated parmesan and chopped parsley, toss, and serve immediately. Garnish with parsley sprigs.
