Ingredients

  • 1 small vidalia (red) onion
  • 1 large cucumber, peeled and seeded
  • 1 small red bell pepper
  • 3 medium tomatoes, peeled
  • cup olive oil
  • ¼ cup vinegar
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 serrano chiles, seeded, or 1/4 tsp cayenne pepper
  • 2 tablespoons mayonnaise

Directions

Quarter the vegetables, then puree together in a food processor. You may have to do this in two batches. Add the remaining ingredients, blend together, then chill in the refrigerator. Serve cold with watercress garnish, croutons, or slices of tomato, cucumber and/or bell pepper.
