Ingredients

  • ¾ cup shortening
  • 1 cup brown sugar
  • ¼ cup molasses
  • 1 egg
  • 2-¼ cups flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt (optional)
  • 1-½ teaspoon ginger (or more, to taste)
  • 1 teaspoon cinnamon
  • ½ tspcloves

Directions

Cream the shortening, sugar, molasses and egg in a large mixing bowl. Sift the flour and other dry ingredients together and slowly beat into the mixture.

Roll by hand into small (1 inch) balls, roll balls in granulated sugar, and bake at 375°F for about 12 minutes until light brown. Makes about 5 dozen. Note that 1-1/2 tsp of ginger makes cookies with a pretty good "snap"!
