• cup apricot, plum or peach preserves
  • ¼ cup balsamic vinegar
  • 2 teaspoons orange zest, grated
  • 1 teaspoon salt
  • ¾ teaspoons coarsely ground pepper
  • 2 large onions
  • 1 3-½ lbs. chicken, cut into quarters plus 2 medium-sized chicken legs, OR
  • 6 chicken breast halves


Preheat oven to 400°F. Mix preserves, vinegar, orange zest, salt and pepper in a small bowl. Cut each onion into 4 large wedges.

Arrange chicken pieces and onion wedges in a large roasting pan, then spoon mixture over chicken and onions. Bake 45 to 50 minutes, basting occasionally with pan juices, until onions are tender and juices run clear from chicken pieces when pierced.

Serve with steamed broccoli and orange slices for garnish.
