Ingredients

  • 3 lbs. green beans, trimmed
  • 3 tbsp oriental sesame oil
  • 1-1/ 2 cups roasted salted cashews, chopped
  • ½ cup sesame seeds, lightly toasted

Directions

Cook beans in a large pot of boiling water until tender yet crisp. Drain well, rinse, drain again, and return to the same pot. Add the oil, toss the beans to coat, then add the cashews and sesame seeds and toss again. Season with salt and pepper, and serve at room temperature.

Notes

I've made this using 1 tbsp of toasted sesame oil and 1 tbsp of butter, instead of regular sesame oil. Toasted sesame oil seems much more common in the USA, and has a much stronger flavor.
