Ingredients

  • 6 whole Gherkin cucumbers, cut into 1/2" pieces
  • 3 tbsp feta crumbles
  • ½ whole lemon, zest and juice
  • 1 tbsp olive oil
  • 1 tbsp greek yogurt
  • salt and freshly ground pepper, to taste
  • 1 dash paprika

Directions

Toss all ingredients together, and serve cold.
