Ingredients

  • 1 lb lean ground lamb
  • 2 tablespoons coarsely grated onion
  • 2 tablespoons chopped flat-leaf parsley
  • 1 teaspoon freshly grated lemon zest
  • salt and freshly ground pepper to taste
  • 1 ripe Hass avocado, peeled and pitted
  • 2 tablespoons plain low-fat yogurt
  • 2 teaspoons fresh lemon juice
  • whole grain rolls
  • 1 tomato, sliced
  • ½ cup alfalfa sprouts

Directions

Lightly combine the first 5 ingredients, and gently form 4 patties. In a separate bowl, mash the avocados with the lemon juice and yogurt, and season with salt and pepper.

Grill the burgers over hot coals for about 4-5 minutes per side. Serve immediately, topped with the avocado mixture, and garnished with tomato and alfalfa sprouts.
