A smooth dessert with a deep lime flavor


  • 4 to 6 limes
  • 3 cups half-and-half
  • 3 egg yolks
  • 1 cup sugar
  • ¼ tsp salt
  • 1 drop green food coloring (optional)


Remove 4 tsp of zest from the limes with a grater or zester, making sure you don't remove the bitter white pith. Chop the zest up into fine pieces. Juice the limes to get 2/3 cup of lime juice.

Whisk the egg yolks, add the half-and-half and sugar, then continue to whisk until the sugar is dissolved. Add the lime juice, zest and salt, stir together, then pour into an ice cream maker. Follow the directions for the ice cream maker to freeze the ice cream, which should take about 25 minutes. Move the ice cream to a container, and freeze for at least 1 hour before serving.

If you want a light green color instead of a golden color, add 1 drop of green food coloring to the mixture before you place it in the ice cream maker.


Ginger ice cream uses the same basic recipe, just substitute 1/4 cup fresh grated ginger for the lime juice and zest.
