Ingredients

  • 5 lbs. roma tomatoes, blanched & peeled
  • 7.5 ounces fresh chopped garlic
  • 10 ounces chopped onions
  • ½ lb. fresh basil
  • 1-½ ounce olive oil
  • sugar, salt & pepper to taste

Directions

Grind tomatoes and basil together. Heat the olive oil, add garlic and onions, sautee until clear. Add the tomato mixture, and cook together for 30-45 minutes over low heat. Season 5 minutes before serving.
