• 1-½ lbs. carrots, sliced 1/4" on a diagonal
  • 3 tbsp butter
  • ½ cup onions, chopped
  • 1 tsp garlic, chopped
  • 1 cup cheddar cheese, shredded
  • ½ cup saltine crackers, crushed
  • ½ tsp salt
  • ½ tsp pepper


Peel carrots, and slice (on a mandoline, if you have one). Steam for 3 minutes to cook partially. Crush the crackers, and toss with the cheese in a separate bowl.

Preheat the oven to 350°F. Melt the butter in a skillet, and sauté the onions until tender. Add the garlic when the onions are nearly done, and sauté for an additional minute. Toss the carrots together with the onions and butter, and salt and pepper to taste.

Now layer the two mixtures into a casserole, first the carrot mixture, then the cracker mixture. Top with the last of the cracker mixture, and bake for 25 minutes.
