This exceptionally healthy salad is best prepared at least an hour before serving, so that the acid in the lemon juice softens the kale a bit, and the flavors combine.

Ingredients

  • 1 bunch Kale
  • 1 small red onion, chopped
  • 1 orange or yellow bell pepper, chopped
  • 1 ear raw white corn, kernels, cut off the cob
  • 1 dash ground cumin
  • 1 dash salt
  • 1 dash freshly ground black pepper
  • 1 dash cayenne
  • 1 tsp agave sweetener
  • 1 whole lemon, juice and zest
  • 3 tbsp extra virgin olive oil

Directions

Chop the kale into dime-sized pieces, and place in a large bowl. Add the remainder of the ingredients, then toss together and let sit for at least an hour before serving.
