Straight up beef chili, no beans.


  • 3 lbs. lean beef-London broil
  • 28 ounces stewed chopped tomatoes
  • 1 large diced onion
  • 4 cloves minced garlic
  • 1 tablespoon american paprika (for color)
  • ½ to 3 tablespoon chili powder, depending on spiciness desired
  • 1 teaspoon cumin (comino)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 small ancho or tomatillo pepper, depending on taste, chopped finely


Brown beef in large sauce pan, then add remainder of ingredients except the pepper. Simmer for 2 hours, and add pepper during the last half hour. Add cooked pinto beans at end if desired, and serve garnished with diced onion and/or grated cheese.

The chili powder makes the flavor, so use the best stuff you can find! Fresh comino and oregano makes a big difference, too.


This is great on a toasted bun for lunch...and can serve up to 10 people
