• 2 cups sugar
  • 1 cup softened butter or margarine
  • 3 cups cake flour
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1-½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 4 large eggs
  • ¼ cup unsweetened cocoa
  • confectioner's sugar


Preheat oven to 350∫F, and grease and flour a 9" fluted tube pan. Beat sugar and butter in a large bowl until just blended, then increase speed to high and beat until fluffy (about 10 mins). Reduce speed to low, and add flour, milk, baking powder and eggs., and beat until well-mixed, constantly scraping bowl with a rubber spatula. Increase speed to high, and beat another 2 mins.

Measure cocoa into a small bowl, sift to break up lumps, then stir in 1 cup batter and 1 tbsp water until blended. Spoon half of remaining batter into tube pan, layer on cocoa mixture, then top with remaining batter. Cut and twist thru batters with a knife to obtain marbled effect.

Bake 50-55 minutes until a toothpick comes out of the center of the cake clean. Cool in pan 10 minutes, then remove onto wire rack to cool completely. Dust with powdered sugar.
