• 2-½ cups all purpose flour
  • cup sugar
  • 3 tablespoons poppy seeds
  • 1-½ teaspoon cream of tartar
  • ¾ teaspoons baking soda
  • ¼ teaspoon salt
  • ¾ cup chilled unsalted butter, cut into small pieces
  • 2 teaspoons grated orange peel
  • 1 large egg
  • 2 tablespoons orange juice


Preheat oven to 400°F. Lightly four a large heavy baking sheet. Mix the flour, sugar, poppy seeds, cream of tartar, baking soda and salt in a large bowl. Add the butter and rub in with fingertips until mixture resembles coarse meal. Mix in orange peel. Whisk the egg and orange juice together in a separate bowl, then add to the flour mixture and stir until blended.

Turn dough out onto a lightly floured surface, knead gently until smooth, then divide in half. Pat each half into a 3/4" thick round, and cut each round into six wedges.

Arrange the wedges on the baking sheet and bake about 10 minutes until golden brown. Serve warm.
