Ingredients

  • 1-¾ cup flour
  • 2-½ teaspoons baking powder
  • ¾ teaspoons salt
  • ½ cup frozen orange juice concentrate, thawed
  • ¼ cup water
  • 1-¼ cups sugar
  • 5 tablespoons unsalted butter, softened
  • 2 large eggs
  • ½ cup chopped toasted almonds
  • 1-½ teaspoon grated orange peel

Directions

Blend sugar, butter and eggs. Sift flour and baking powder in a separate bowl. Mix orange juice concentrate and water in a separate bowl. Stir the flour mixture and the OJ alternately into the butter mixture to make a batter, then add the almonds and orange peel.

Bake about 55 minutes at 350degF until a cake tester comes out clean from the middle.
