Ingredients

  • 1-½ cup orzo
  • 2 cups fresh spinach, finely chopped
  • ¼ cup sun-dried tomatoes, finely chopped
  • 2 tbsp goat cheese
  • 1 tbsp olive oil
  • ½ whole lemon juice and/or zest
  • cup pine nuts, toasted
  • 2 tbsp italian parsley, finely chopped
  • salt and freshly ground pepper, to taste

Directions

1. Prepare the orzo, boil in a quart of water (unsalted) for 7 minutes
2. Toss together with the remaining ingredients, and adjust seasoning with salt and pepper.
