• 2 cups whole wheat pastry flour
  • ½ cup butter
  • ½ cup vegetable shortening
  • 4 tablespoons milk


Chill everything (flour, butter, crisco, milk, pastry cutter, bowl, etc.)

Cut butter into flour until it is in small pea-sized pieces (or smaller). Then cut the shortening into flour and butter mixture. Sprinkle milk onto the mixture and stir with a chilled fork.

Knead until dough forms into a ball that cleans the bowl. Toss from hand to hand to remove air bubbles. Roll out onto floured board, then transfer to pie pan using the rolling pin. Chill before filling.

Fill the pie. Bake 450°F for 10 minutes, then bake at 350°F for 25-30 minutes, depending on the filling. Makes a single crust pie. Double the recipe if you want to add a top crust.
