Ingredients

  • 2 cups pineapple, diced into 1/2 inch pieces
  • ½ cup red bell pepper, diced into 1/4 inch pieces
  • 1 tablespoon fresh lime juice
  • 1 tablespoon sugar
  • 1 tablespoon fresh mint, chopped
  • 2 teaspoons fresh ginger, peeled and minced

Directions

Combine all ingredients, and refrigerate for 6 hours before use, to let the flavors combine. Great on Salmon Burger patties!
