• 4 pork shoulder or loin chops
  • Marinade:
  • 2 cups pomegranate or Trader Joe's Triple Berry juice
  • ¼ cup salt
  • ¼ cup brown sugar
  • Sauce:
  • 3 cups pomegranate or Trader Joe's Triple Berry juice
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground clove
  • 1 cardamom pod
  • ¼ teaspoon dried mustard powder
  • 1 teaspoon fresh thyme leaves
  • 1 apple, peeled, cored and coarsely chopped
  • 1 tablespoon raisins or currants
  • 1 tablespoon honey
  • 1 tablespoon butter
  • pepper to taste


Make a marinade from the first four ingredients, leaving the chops in the juice mixture for about 2 hours. Don't marinate longer or the chops will start to fall apart.

Add the juice, spices, thyme, apple and currants to a sauce pan, and reduce to about 1 cup, about 5 to 7 minutes. You'll have to watch this, because it will reduce quickly. Stir in the honey, finish the sauce with the butter, and season with a little pepper. Cover and keep warm.

Remove the chops from the marinade, season them with pepper, and grill over high heat for 4 minutes. Flip them over, reduce the heat to medium, and grill for 6 minutes more until firm to the touch. Remove from the grill, add them to the sauce, and let them stand for 5 minutes. Serve warm, with additional sauce on top.
