• 2 lbs. pork loin
  • Marinade:
    • 1 medium onion, chopped
    • 1 teaspoon fresh ginger, crushed
    • 2 cloves garlic, crushed
    • 1 tablespoon Chinese 5-spice powder
    • 1 tablespoon honey
    • ¼ cup light soy sauce
    • cup sunflower oil
    • 2 stalks lemon grass, chopped
  • Satay Sauce
    • 2 tablespoons butter
    • 1 teaspoon red pepper flakes
    • 1 medium onion, finely chopped
    • 1 teaspoon peanut oil
    • 1 tablespoon soy sauce
    • 5 tablespoons chunky peanut butter
    • 1 teaspoon lemon juice
    • ½ cup coconut milk

Cut the pork into 1" cubes, and marinade in a mixture of the other ingredients for 2 hours.

Grill the pork on skewers over charcoal.

Make the satay sauce by melting the butter, sauteeing the onion until clear, then add the pepper flakes, peanut oil, soy sauce and peanut butter. When peanut butter is melted and mixed in, add lemon juice then gradually add the coconut milk over high heat.

Dip pork into sauce, or serve with sauce poured over.
