Dinner rolls from mashed potatoes, who would have thought?


  • 1 cup mashed potatoes, warm
  • 2 -¼ cups unbleached flour
  • 2 teaspoons salt
  • 1 package fast-rising yeastl


In a large bowl, mix the potatoes, 2 cups flour, salt, and yeast. Add 1/2 cup of warm water. Mix in enough of the remaining flour to make a soft dough. Turn it out and knead it on a lightly floured surface until smooth and elastic, about 10 minutes. Place in a lightly-oiled bowl, cover with plastic paper and put into an unlit oven, where it will be safely out of drafts, and let it rise for 1-1/2 hours until doubled in volume.

Punch the dough down, and place on a floured board or countertop. With a knife, cut the dough into six equal parts. Roll each of the six pieces of dough into a smooth ball, and place on a baking sheet, spaced evenly. Cover and let rise again for about 40 minutes until light and puffy.

Preheat your oven to 425°F. Gently flatten each ball of dough into a 4-inch round, sprinkle lightly with flour, and bake for 20 minutes until the rolls are golden brown.
