Ingredients

  • 3 large potatoes OR
  • 12 small red potatoes
  • 1-½ cups cottage cheese
  • ½ cup sour cream
  • 2 cloves garlic
  • ½ teaspoon salt
  • 2 scallions, finely chopped
  • 1 cup grated Cheddar cheese
  • paprika

Directions

Boil potatoes until just tender, then cut into 1" pieces and combine with cottage cheese, sour cream, garlic, salt, scallions, half of the grated cheese, and 1 tsp paprika.

Place into 9" round baking dish, sprinkle remaining cheese on top, dust with paprika, and bake at 350F for 40 minutes. Serve warm.
