Ingredients

  • 2 tbsp unsalted butter
  • ¼ cup onion, grated
  • ¼ tsp dried oregano
  • sea salt, to taste
  • 2 cloves garlic, minced
  • 28 oz Crushed tomatoes, 1 can
  • ¼ tsp sugar
  • 2 tbsp fresh basil, coarsley chopped
  • 1 tbsp extra virgin olive oil
  • fresh ground black pepper, to taste

Directions

1. Heat butter in a medium saucepan, then add onion, oregano and 1/2 tsp salt. Cook, stirring occasionally until liquid has evaporated and onion is a golden brown, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds
2. Stir in tomatoes and sugar, increase the heat and bring to a simmer. Lower the heat and simmer until slightly thickened, about 10 minutes. Off the heat, stir in the basil and oil, season with salt and pepper, and serve over your favorite pasta.
