Ingredients

  • ½ cup white rice
  • cup water
  • 4 cups milk
  • zest of a lemon
  • zest of an orange
  • ¼ teaspoon powdered cardamom
  • pinch of powdered clove
  • 1 egg yolk
  • cup cream
  • 2 tablespoons sugar
  • ½ teaspoon vanilla
  • ½ cup raisins

Directions

Wash the rice well, and cook in the water, covered, for a few minutes until the water is absorbed. Add the milk, lemon and orange zests, cardamom and clove, bring to a simmer, and cook slowly for 20 minutes.

Whisk together the egg yolk, cream, sugar, vanilla and raisins, add to the rice and mix well. Pour into a well-buttered 8x8" or 9x9" baking dish, dust with sugar and cardamom powder, and bake for 2 hours at 310°F.
