Ingredients

  • 3-½ lbs. pork roast
  • 2 teaspoons chopped garlic
  • 1 cup onion
  • 1 cup green bell pepper
  • 1 cup tomato sauce
  • 1 bay leaf
  • ½ teaspoon salt
  • ½ cup dry wine (either red or white)
  • ½ teaspoon cumin seeds
  • 1 teaspoon chili powder

Directions

1. Thickly slice pork, salt and pepper the pieces, and sauté in olive oil until browned on both sides. Add 1 cup of water, simmer for 2 hours, checking and adding water to make sure it doesn't burn. Shred the pork into small pieces.
2. Sauté sliced onion and green pepper with the garlic in olive oil. Add to the pork, then stir in remaining ingredients and simmer for 1/2 hour. Serve on warm flour tortillas.
