Ingredients

  • 3 lbs. rolled pork loin
  • 1 medium sized, tart green cored apple
  • salt
  • pepper
  • butter
  • apple juice
  • cup white wine
  • cup cream

Directions

Salt and pepper the outside of the roast thoroughly, then insert 1/8 slices of cored apple into the middle of the roast.

Place in 350°F oven for 45 minutes per pound, and occasionally melt a little butter on the outside. Also add a few tablespoons of apple juice to the pan after the first hour of roasting.

Remove the roast, and bring the liquid amount to 1/2 cup by adding apple juice (and a pat of butter, if the pork was very lean). Use the liquid to deglaze pan. Add about 1/8 cup of cream and 1/8 cup white wine, then reduce to a sauce. Slice the roast into 1/2" pieces, and serve with the sauce.
