Ingredients

  • 2 lbs. center-cut salmon, skinless and boneless
  • ½ cup fresh bread crumbs
  • 1 egg, lightly beaten
  • 2 scallions, finely sliced on the diagonal
  • zest of 1 lemon, finely chopped
  • 2 tablespoons chives, finely chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1-2 dashes Tabasco sauce
  • salt and fresh pepper to taste
  • Pineapple Relish receipe

Directions

Coarsely chop the salmon, into 1/4" pieces. Combine with all the remaining ingredients except the Relish, and form into 6 patties, 3 inches by 1 inch thick.

Brush the grill with oil, and grill the patties for 3-4 minutes per side, until just cooked through. Serve with pineapple relish.
